Chinese New Year Menu 2020 @Chynna, Hilton Kuala Lumpur

Smoky Chicken with Rice Krispies Yee Sang
Toss to good fortune with Chynna’s signature Yee sang for 2020, the Smoky Chicken with Rice Krispies Yee Sang. Inspired from the song "Lao shu ai da mi" (Rat loves big rice), Chef Lam makes it a barn affair with smokey chicken instead of raw fish. To compensate the soft fish meat texture that we are used to in Yee Sang, chicken meat was made starkly tender and succulent. Every bite is accompanied by a festive crisp with not only the crackers but also rice crispies to welcome a promising new year.

One must also try the Strawberry and Macadamia Nuts Yee Sang, Crispy Fish Skin and Salted Egg Yolk Soft Shell Crab Yee Sang, Norwegian Salmon Yee Sang with Passion fruit Sauce and Traditional Norwegian Salmon Yee Sang.

This tummy warmer is no ordinary tomato soup. Take a spoonful and be amazed how the humble tomato can score. Seafood gave it a savoury dimension while the almonds gave a unique appeal.

Eight Treasure Salt Baked Chicken Chef Lam Style
There is no skimping on ingredients when it comes to the Eight Treasure Salt Baked Chicken. Loveably salty, the chicken is toothsome with a clever balance of Chinese herbs and spices. 

Steamed Moontail Grouper with Green Lime and Garlic Chili Sauce
Those who appreciates fish will understand the irresistible outcome of garlic and ginger on fish. The steamed moontail grouper captured our hearts with exactly those ingredients. On top of that, the tactful use of lime made the taste clear and appetizing.

Sliced Abalone with Sea Cucumbers, Dried Oysters, Sea Moss and Chinese Cabbage in Claypot
This dish owes its taste to nothing else other than its own umami goodness. Abalone with sea cucumbers, dried oysters and sea moss are simply braised together with perfect timing for that a textural pleasure of Chinese dried seafood. 

Stir Fried Prawns with Kam Heong Pepper Sauce
Crunchy prawn meat absorbs the best of two cooking styles when stir fried with Kam Heong and Pepper. The bold taste of pepper tantalizes the tastebuds for a lip smacking moment. 
Fragrant Fried Rice With Preserved Duck Meat Wrapped in Lotus Leaf
Down to earth, the fried rice gives substantial comfort. The lotus leaf lends a woody aroma while dried shrimps give spikes of enjoyable flavour. Savour it slowly and take pleasure in the taste of the duck meat emerging as you chew.

Chef Lam brilliantly draws the curtain to the meal with the high of delectable desserts leaving guests hankering for more. Sink your teeth into a lump of Musang King durian wrapped in snow skin for that divine moment. Then, sooth the trachea with silkly double boiled almond cream with tendrils of beneficial peach gum which texture is not much different than that of bird's nest's.
