Giant Mud Crab & French Crab @ Chynna, Hilton Kuala Lumpur

Seated in opulent setting of crimson hue, my friend and I were imagining ways of getting our fingers dirty elegantly in Chynna, Hilton Kuala Lumpur's premier dining restaurant. While absorbing the Tang Dynasty inspired atmosphere, we chatted about our anticipation of Chynna marrying two of our favourite food- crabs and durian! Like any other marriages, it is quite a risk. However, as it was Hilton's restaurant, we had faith that it was a wageble call.

There it was. The unthinkable dish stared back at us. A layer of thick yellow sauce of predictable origins was doused over the crabs, leaving its red shells peeping from under. There was no distinct smell although durians have a strong fragrance. We have to say that this dish is indeed made only for the fruit's loyal fans. Durian haters, don't say you were not warned.

Although a true blue durian lover, I had doubts when I first saw it. But, it all melted away at the first bite. The taste of Musang King makes its way to the tastebuds gently and sweetly. Sinking my teeth further into the crab, I could make out that cheese was cleverly used to bridge sweet and savoury while butter was added to bind the flavours. The mud crabs were indulgingly fleshy. I found myself licking the sweet sauce off the plate at the end of it.

This innovative creation is a good choice for people who have an appetite for unique choices.

Other than introducing the durian sauce, Cynna is also responsible for my new liking for crabs by introducing the French crabs! Other than being meaty, French crabs have toothsome roe, thick and dense, hidden underneath its oval-shaped shell. Usually being competitive over crab roes, I was pleasantly surprised and excited that there were sufficient scoops of golden bliss for 4 people from one crab. The the French crab shells, as my friend describes, were like coffers filled sumptuously with treasures of taste orange and yellow.

We had the French crab in luscious butter milk sauce, laced sufficiently with the fragrance of curry leaves. Many would agree it was a lip-smacking dish.

The black pepper style seasons the crabs in bold peppery flavour without being overwhelmingly spicy giving opportunity to the appreciation of the seafood itself. The crab was slathered in dark sauce but had us in bright smiles at the end of the dish.

The Kam Heong, a traditional Chinese flavour, is another famous way to prepare the crabs. Have the crabs punctuated with morsels of dried shrimp. The briny quality of this dish can easily help down bowls of rice. Again, the French crabs gave us another round of its bountiful roe.

Our satisfied faces testifies to Chynna's culinary standards. Heading the kitchen is Chef Lam who proves his versatility in Chinese cooking through the display of these crustacean dishes. In its gracefulness, Chynna is more than happy to handle the mess devouring these delicious crabs amid serving other Cantonese and Shanghainese cuisine dishes. Chynna is also known to welcome guests with a specially brewed 8-Treasure Welcome Tea through a metre-long spout kettle.
