Seafood at Restoran Pasir Putih Baru in Sandakan, Sabah

There is nothing much you can do with it when you have fresh seafood. Employing the simplest cooking methods like steaming and baking will be best. The ocean have done the seasoning and all we have to do is let the natural flavours exude from those shells and scales. Being at the edge of the Sulu Sea, Sandakan boasts seafood of premium quality. You'd be missing out if you don't have your hands on them when you are visiting this part of Malaysia.

One of the promising restaurants is Restoran Pasir Putih Baru. With fish tanks in sight upon entrance into the restaurant, you can sense that this eatery is serious with their seafood. This restaurant serves no pork and is muslim friendly.

Lobster Noodle
What better way to serve a plate of noodles than with a whole lobster. This grand platter tastes as regal as it looks. With fried egg noodles (sang mee) beneath chunky lobster meat, gravy thickened from superior soup is poured above it. The noodles is allowed to soak up the gravy and soften to the perfect bite. Combination of the noodle, gravy and lobster is very engaging and will have you licking off the plate.

Steamed prawns
Timing is all the seasoning needed for this plate of steamed prawns. The restaurant lets its crunchy flesh do the advocacy for its freshness. I prefer it without dips to enjoy the unadulterated taste of the sea.

Baked crab
Crab is prepared by baking with a rub of salt. I personally felt that salt was not necessary but it did not do much harm. Crabs are crabs are crabs. It kept the people on the table focused while digging for crab meat.

Squid is the kind of food that requires some expertise as it can be from undercook to overcook in a short while. The squid meat was springy and served with simple seasoning like dark sauce and oyster sauce. I would return for fried and salted egg version.

This steamed garoupa is the case where less is more. The big fish is meaty and only needs a touch of soy sauce to reach that blissful taste.

Just Seafood @ Sunway Giza

It is time to get messy! It is obvious that seafood and mess come hand-in-hand in order to enjoy its scrumptiousness. In Sunway Giza, there is a restaurant that approves of the chaos. Just Seafood is a specialist in western style seafood, serving meals in the most unusual way!

Just Seafood, like its name suggests, has been serving fresh ocean harvest from crabs to prawns to oysters and mussels since 2014. Other than its interesting menu, it has also pioneered the on-table style. If you have passed by restaurants that pours the food on the table without any plates, I am proud to inform that it is the brainchild of Terrence Ham, owner of Just Seafood.

I would say, my sister and I not only went for good food, we embarked on a seafood adventure that evening.

The oyster got me literally eating out of its palm. I was in heaven!
The world became our oyster the moment the first dish was out. Incredibly fresh raw oysters flown in from the United States in the size of my palm definitely stimulated our appetite. The oyster was so huge that it took several bites to finish which definitely gave me a generous amount of satisfaction. I had mine untainted (without sauce) and in its most raw and original form. I died of happiness and went to heaven! Every bite was succulent and sweet with its divine texture. If you want to taste oceanic sublimity, this is the place.

The signature dish was spread on the table after the impressive prelude. The seafood combi that includes mud crabs, prawns, clams, mussels and squid are cooked in Louisiana Cajun Style. This style is popularized by the Vietnamese in Louisiana. Terrence and his Vietnamese chef, perfected their version of Louisiana Cajun sauce which has just the right thickness. Every piece is smothered by tangy and flavoursome Cajun sauce that has a tinge of spiciness. The spiciness level can be adjusted according to customer's taste. I find its taste goes very well with seafood. Comes with choice of rice or bread.

Beware of the Creamy Peanut sauce! There is no way to debate about its spell-binding fragrance.  I must say that this is my favourite although the Cajun is their best-seller. Another authentic concoction by Terrence and his chef, is inspired by Malaysian's favourite satay peanut sauce. It is reinvented to blend with seafood with a nutty taste and a creamy note. Remember to mop the table with bread to savour the gravy.

Non-spicy and sufficiently creamy, the Butter Milk is the western version of the Chinese lai yau. The package is sans squid and clams because butter milk sauce would match them less. Its aroma is beholden to the adequate spices thrown into the equation. Whole bottles of buttermilk are whisked into the special blen and enhanced by freshly plucked curry leaves. 
You can tell that food was cooked with the right amount of time as squid was tender and succulent and non of the crustaceans' meat shrank. Just Seafood does not skimp on ingredients and makes sure that quality is priority. The restaurant is completely pork-free and has an open kitchen concept so that nothing is concealed.

Those who have been to Perth would have heard of Uncle Vincent's Chili Mussels. Now you can get the dish cooked using the exact recipe right here. This item however is not a regular on the menu. It appears on the specials list occasionally. I find it quite a pity as this tasty bowl of mussels is definitely a delight to have. Seasoned with mixed herbs, it exudes piquancy amid the tangy tomato and chili sauce.

Just Seafood gave my sister and I a memorable meal that evening. The fun of primitively grabbing food  from the surface of the table was simply awesome! You should have been there when my sister told me to "pass" her the squid- I grabbed them with my hands and put it anywhere within her reach! Thumbs up to this concept! I recommend this place for an oyster fix or a unique seafood meal.

Seafood Market and Restaurant @ Bangkok

A simple nod to my friend's dinner invitation became a ticket to a captivating gastronomy experience during my trip to Bangkok. If you happen to be in the Land of Smiles and looking for a place for a memorable meal, flag a tuk tuk to Sukhumvit Soi 24. The Seafood Market and Restaurant in Bangkok offers something out of the ordinary sans the fear factor.

The first dish that was served was a dish of confidence! "If It Swims, We Have It!". True enough, there is nothing that swims that is not available- fish, squid, crustaceans. And nothing can get fresher than seeing your dinner swimming before ending up on the table. The restaurant is walled up by aquariums and are the first things customers notice. It is no wonder that no MSG is added. Freshness must have taken over the whole role of flavouring the food.

Although taking pride on its vast array of swimming creatures and freshness, the seafood restaurant still endeavours to impress guests with piquant flowers and enticing fish decoration 'swimming' above diners.

To those who fancy seafood ala Japanese, there is a counter that proffers ready-to-eat dishes. Understanding that seafood can be better appreciated with wine and spirits, there is a section with racks and racks of alcohol for you to select your drink from.

After payment, trolley will be pushed to your table for a little discussion on cooking methods. If you are out of ideas or choose not to wear the chef's hat during your holidays, the restaurant staff will feed you with suggestions and ideas before pushing the cart away to the kitchen. However, do be prepared for the cooking charge.
Now to discuss the choice of cooking
Pineapple Fried Rice raised the curtain of the seafood affair with its fragrant wafts of curry. Rice was loose and evenly stirred with cuts of pineapple, squid and prawns. The hints of fresh pineapple added zest to the comforting platter.

The Tom Yum Talay (Seafood Tom Yum) stole my heart that evening. My heart melted with the balmy soup that inherited enough zing from lime and essence from crabs, prawns and squid.

The Baked Mud Crab needs no interference from other seasoning. Meaty and juicy, every bite of the flesh is divine. I was speechless savouring the innate flavours of the crab.

Tiger Prawns were apty barbecued to perfection. The slight char did no harm to the taste and texture of the succulent prawns. Freshness was sealed and so was satisfaction.

I would have done my Calamari in a sourish manner instead of deep frying such freshness. Flour was a little too overpowering masking the sweetness of the squid. The fried batter also took up a lot of stomach space.

Becareful when you order Sweet and Sour Crab in Thailand. It is not doused in thick sweet and sour gravy which you can mop with a man tau like in Malaysia. The crab is first fried and buried under a mix of cut vegetables covered in a thin film of sour sauce. The dish was a disappointment and a waste of quality seafood.

We were then consoled by the unambitiously blanched cockles that could not go wrong. We allowed its untainted taste to cheer us from the sweet and sour disaster.

Stir fried vegetable was done humbly with garlic. This simple dish was passable but with no outstanding impression.

We finished our dinner by cleaning our palates with the famous Thai mangoes that were so rich with sweetness. These too were the products from the cart earlier.

The Seafood Market and Restaurant in Bangkok indeed got me hooked on its freshness. The immensity of seafood supply is impressive with interesting marketing concept. It gives your itinerary a memorable note. However, be prepared with a bulky wallet before your visit. Many corporate groups were spotted that evening. Methods of cooking is subject to local taste. Therefore, stay with simple cooking methods like steaming, barbecueing and baking to enjoy the best of your chosen seafood. Sawadee kaa!
