Seafood at Restoran Pasir Putih Baru in Sandakan, Sabah

There is nothing much you can do with it when you have fresh seafood. Employing the simplest cooking methods like steaming and baking will be best. The ocean have done the seasoning and all we have to do is let the natural flavours exude from those shells and scales. Being at the edge of the Sulu Sea, Sandakan boasts seafood of premium quality. You'd be missing out if you don't have your hands on them when you are visiting this part of Malaysia.

One of the promising restaurants is Restoran Pasir Putih Baru. With fish tanks in sight upon entrance into the restaurant, you can sense that this eatery is serious with their seafood. This restaurant serves no pork and is muslim friendly.

Lobster Noodle
What better way to serve a plate of noodles than with a whole lobster. This grand platter tastes as regal as it looks. With fried egg noodles (sang mee) beneath chunky lobster meat, gravy thickened from superior soup is poured above it. The noodles is allowed to soak up the gravy and soften to the perfect bite. Combination of the noodle, gravy and lobster is very engaging and will have you licking off the plate.

Timing is all the seasoning needed for this plate of steamed prawns. The restaurant lets its crunchy flesh do the advocacy for its freshness. I prefer it without dips to enjoy the unadulterated taste of the sea.

Baked crab
Crab is prepared by baking with a rub of salt. I personally felt that salt was not necessary but it did not do much harm. Crabs are crabs are crabs. It kept the people on the table focused while digging for crab meat.

Squid in dark sauce
Squid is the kind of food that requires some expertise as it can be from undercook to overcook in a short while. The squid meat was springy and served with simple seasoning like dark sauce and oyster sauce. I would return for fried and salted egg version.

This steamed garoupa is the case where less is more. The big fish is meaty and only needs a touch of soy sauce to reach that blissful taste.

Chef Ho Boon takes pride in presenting the Crispy Roasted Duck with Chinese Herbs. The kitchen dedicates close to 10 hours preparing the toothsome dish. Crackling crispy duck skin caps every cut of tender duck meat that just sends bliss to the palette.

Deep Fried Pomfret Fish with Sweet and Sour Strawberry Sauce (
Strawberry is not only a pretty dessert in Chef Ho's kitchen. The sweet and sour fruit contributes to the mouthwatering tangy sauce doused over deep fried pomfret. Indeed a refreshing twist from the regular sweet and sour ingredients as the fruit's fructose seep into the fish.

Freshness of tiger prawns is brilliantly flaunted by a careful blend of white and roasted garlic steamed with tactful amount of vinegar. The combination of seasoning keeps it well flavoured yet simple enough for the seafood's natural sweetness to unfold.

Braised Sliced Abalone with Conpoy and Lion's Mane Mushroom with Seasonal Vegetable
The gentle dish of vegetables is not to be underestimated. Lion's mane mushroom is braised till the right texture accompanied by sapid dried seafood, abalone and scallops which upped the dish's appeal.
Braised Five Grain Rice with Diced Chicken and Conpoy in Abalone Broth (RM56 nett per portion)
Being the penultimate dish, there is usually not enough appetite for rice. Chef Ho however, made this dish easily welcomed in abalone broth. The seafood broth recreates salivation among us to gobble our portion up. 

Hot Sweetened Eight Treasures in Almond Cream
Dessert in the Celestial Court is always something to look forward to no matter how well-fed we were from the dishes before. The smooth almond cream is ground from scratch in the Chef Ho's kitchen and accentuated with traditional Chinese goodies like wolfberries, lotus seeds, lily bulb, snow fungus, dates, aloe vera and longan. This bowl of sweet indulgence will even impress eaters who are not familiar with almond milk.

Fung Shan Shui Hei Seafood Yee Sang RM48.80
One of the highlights of Chinese New Year is of course to toss to prosperity! The higher the toss, the luckier! This colourful platter of Yee Sang comprises of delights like salmon, clam, baby octopus prawns and jelly fish. Bound by tangy plum sauce, this dish brings much happiness. Comes only in one size.

These triplets at RM50 is just the perfect thing to make the table merry. My favourite would be the Steamed Crabs with Egg White. Crab meat is fresh and springy. Slurping the juices of oceanic goodness that is infused with Chinese wine is just divine. Salted Egg Crabs are covered with lip-smacking sands of pounded salted egg yolks while the Spicy Buttermilk ones are fragrant with curry leaves.

Seafood in XO gravy is a pot of goodies for 1 person. Those who like to share might think twice. The flavour from the seafood seeps into the broth for a slurping good enjoyment!

Chicken and Duck Talk 
This Chicken and Duck Talk gets people agreeing of their crispy skin and succulent meat. Both half birds are made differently. The chicken is fried in fragrant tea seasoning while the duck aromatic roasted duck skin cracks at every bite. A wondrous choice.

Parrot Fish in Buttermilk and XO sauce RM75
The Parrot Fish's meaty texture allows for great variety of cooking. Thus the restaurant serves a dish with two matching sauces as a favour to fickle eaters. An auspicious dish for the new year 'nian nian you yu'.

Yam Ring with Chicken Wings RM25.00
This Yam Ring is made 100% of yam goodness which makes it softer and packed with undiluted yam taste. Instead of vegetables in the middle, this dish is made special with chicken wings.

Tom Yam Prawns is one toothsome dish with thick gravy. Sweetness and sourness of the soup is just right making you want for more.

Clams (Lala) in Superior Soup RM18.00
Clams in Superior Soup sends you to La La land with its Chinese wine infused broth. The zest from ginger gives a subtle kick while the soup gets you slurping with fresh clam meat.

Spinach in Superior Soup RM12.00
Drink up some Superior Soup that is brimming with anchovy sweetness. Soft spinach, wolfberries and century eggs also contributes to the sweetness of the broth reeling us spoon by spoon.
