Braised tomato soup with vegetarian fins, assorted seafood topped with almond crush.
The sweetness and acidity of tomato gives the soup just the zest that the seafood bits needs while the almond gives the soup an interesting nibble.

Stewed free-range chicken with black sugar and fine soy sauce.
Aside from the smooth chicken meat, attention was also drawn to how springy the chicken skin was. Loaded with collagen, the black-sugar marinated skin of the chicken would be a huge waste if not consumed completely

Remember also to compliment the chicken with the aromatic garlic condiment

Steamed red grouper chunks with sakura shrimps, onion and chilli
Accompanying the delicate white flesh of the grouper are savoury sakura shrimps that releases approving crisps in every bite. Together with the soy sauce, the sweetness of the fish is better appreciated.

Chynna signature butter milk prawn with crispy rice
In this dish, Chef Lam cleverly sprinkled rice puffs on the fresh prawns giving the prawns an interesting texture without diluting the taste of the butter milk sauce.

Stewed claypot abalone with sea cucumber, sun dried oyster, fatt choy, mushroom, bean puff and garden green

Fried rice with minced chicken and mushroom wrapped in lotus leaf

Combination of sweetened pear with osmanthus fragrant and peach gum deep fried musang king durian pie
