The Beefiest Vietnamese Pho in Town @ An Viet Paradigm Mall

That bowl of beef pho got me finishing the soup till the last drop. They call it the beefiest beef noodle in town and so far they got my vote for it! That bowl of Vietnamese Beef Noodle Special by An Viet packs a punch of bovine goodness. The beef parts, may it be the brisket or the tripe or the tendon, are cooked just right so that there is no need for effort to chew. Their clear soup inherits all the beefy essense while being just gamy enough to tantalize the palette. Beef lovers will be courted and those who are not might be converted.

Vietnamese Beef Noodle Special

Other than quality ingredients, you can tell that there has been a lot of thought poured in the bowl of pho. Every aspect of the beef noodle is curated.

They have made three improvements on their signature dish:

1. Different types of beef bones are used to enhance sweetness and to add better texture of the broth. It is no doubt that the effort to prepare the broth by simmering it for 12 hours with 18 herbs and spices pays off. The soup is thoroughly flavourful sans MSG so that you can go ahead and savour it all without having to chug down a jar of water later.

2. If y ou like beef, I'd like to see how you resist the premium raw ribeye used. Well marbled and just the right thickness, the slices of meat just melts in your mouth.

3. An Viet now uses not any ordinary tripe but crunchy honeycomb tripe. You can tell that the tripe is seasoned with passion by its tenderness. It is always a mouthwatering moment unearthing it from the bowl.

In your bowl of beef pho, slurp up the silky and thin rice noodle. I tried to be satiated with the medium portion but was in vain. Scroll down to see how one additional portion looks like.

I nearly told the waiter to exclude the tendons as I always had to deal with tough ones that tire my jaw but I am glad I did not. That gob of collagen was like springy gel that was a pleasure to have. Brisket was brilliantly tender while beef balls were bouncy and imbued happiness.

Fresh condiment corner. The restaurant lets their customers harvest their own basil leaves. It makes my meal more interactive!

Other than dishing out the beefiest pho in town, An Viet also contributes to some character building in the society. Upon your visit, you will notice a lot of posters about no food wasting,  stopping hunger and being a ZERO food waste HERO. A food-losophy firmly upheld to ensure food is finished.

This restaurant lets you choose the right rice or noodle portion from 100 gm, 150 gm to 200 gm. If you need more, they will top it up for you till the maximum amount without additional charges. For every finished meal, RM0.10 will be donated to Food Aid Foundation. So far they have donated RM50,000.

In sync with the intention to reduce food wastage, An Viet lets guests harvest fresh basil leaves from the live plant by themselves so that they know how much they need. This I have to say is a concept out of the ordinary. It was not only waste-free but enjoyable having to cut my own basil leaves instead of sitting and waiting to be served.

An Viet has a wonderful concept of letting their guests choose the portion that they can finish.
If you need more, they will top it up for you without additional charges. I think it is a very character-moulding way of spreading this value. For every meal finished, An Viet donates RM0.10 to the food bank. So far, they have donated approximately RM50,000

To give you an idea, 50g is 3 mouthfuls of noodles (according to my mouth size)

Fresh beef combined with its lard for a palatable texture

An Viet's beef balls are 100% handmade. Not even the blender is used.
..
Harvesting basil leaves right from the plant itself!

Fresh condiments to accompany my bowl of pho

The premium raw ribeye entices the palette

Silky strands of pho that slips into your throat

Honey comb tripe

Tender beef brisket

Collagen-rich tendon is a true pleasure to have

An Viet also champions zero wastage

Ăn Viet is a chain of restaurants set up by Caren and William, born out of their love for good food and their vision for ‘A World With Zero Hunger’, as Vietnamese cooking, whilst allowing creative preparation methods, ensure every part of the plant or animal is turned into a delicious dish, thus reducing food waste. Their travels and passion took them from North to the Central and South of Vietnam, understanding the food culture and researching the art of Vietnamese cuisine, to curate a menu showcasing the best of Vietnam, so that people will enjoy and hence "Ăn" (Vietnamese for to ‘EAT'), and NOT waste food’.

Ăn Viet which literally means ‘Eat Viet’, is a casual dining restaurant that stays true to a key characteristic of traditional Vietnamese cooking – using only the freshest premium ingredients and allowing the natural flavours of the ingredients to shine through.

Ăn Viet is also found at The Gardens Mall, Mid Valley (near to Jaya Grocer), Sunway Pyramid (near to AEON Supemarket) and in Penang at Gurney Plaza.
